The Trappist beer that defined the style, this Belgian tripel pours deep gold beneath a rocky head, offering banana, citrus, pepper and fresh hops. Bottle-conditioned and beautifully complex, it drinks creamy then bone-dry, with a long, fruity-bitter finish. Serve at cellar temperature with poultry, washed-rind cheese or shellfish.
